Please take a moment to review our Summary of Learning for ECMP 355: 

We used Youtube, Compfight, Screenshots, Paint, Preview, Flipagram. Screenomatic, imovie, and our blogs to make this magic happen. Magic… that took over 3 hours to make! I now have mad respect for people who make high quality videos and the time and effort they must put into these creations (see Kid President’s video below, for an example). We thought that we would have a lot of trouble editing the video and putting 3 videos together but it ended up being the easiest part of the project. Screenomatic, however, was the hardest part and took us 4 takes to make the initial pep talk. Each take got a bit better and easier, so that was a benefit.

I think the making of this video relates to the class… hard work but worthwhile in the end. Among the struggles…

Review 360 by Taylor and Kourtney

Today we will be discussing Review 360which is a behavior tracking application that is used by school divisions to allow schools to target and solve behavioral issues that students may have. Some of the benefits of the program are the ability for classroom teachers to input information regarding student behavior. The teacher can choose whether they dealt with the issue in their classroom or whether the issue is being dealt with by administration. Since all teachers have access to the entered information and can offer their input a well-rounded picture of the student is created in various environments, making it easier to figure out where the issues are stemming from. The program allows teachers to create intervention plans to eliminate the behavior, not only in their classroom but throughout the school. This can be a great communication tool amongst teachers and for SST’s and administration. The data is recorded objectively, for example latency, duration, frequency, etc…

You Really Knead to See This!


Today, I decided I ‘kneaded’ to step it up a bit, so I am attempting Honey-Whole Wheat Bread.  I found this recipe on Betty Crocker’s website.  I liked the reviews that this recipe gave, that it was an easy recipe for beginners, so I decided to try it.  Since I have never attempted to make a whole wheat bread, I looked up some helpful tips on the difference of the flour and how to work with it in bread.

I started by dissolving my yeast until it got bubbly, that is my new way to make sure the yeast is alive and kicking!  I only had a bit under half a cup of honey on hand, so I just went with what I had.  Without an electric mixer, I had to use some serious elbow grease.  One thing I noticed about this recipe was that it had almost double the amount of flour that I used when I made the basic white loaf.  After I had everything mixed into the dough, I turned the dough out onto the counter to knead it.  I did a bit of research for a few more tips on how to knead bread this time.  After kneading, I greased and covered the bowl with saran wrap.  I had learned from my experience last time, that because I live in a drafty basement, the saran wrap does a better job of keeping the cool drafts out, which is important for the dough to have a warm place to rise.

Then I turned the dough out, cut it in half, and rolled into two logs.  I got new pans this time – The right size! So after proofing the dough again, it had come over the sides of the pan (like it was supposed to with the white bread, and didnt!).  It was nice to see things working the way they were supposed to.

After proofing, I popped the loaves into a 375 degree oven to cook for 40 minutes.  At the start, I forgot to lower the rack positions, but remembered at the last minute!


The bread came out loooking full and beautiful!


I found that this bread was very heavy.  I was more than full after one slice, but it toasted up really nicely.  For next time, I looked into how to make the bread less heavy, and will be definitely be taking this article into consideration before the next time I bake bread!

At Yeast We’re in this Together!


Here goes the start of my bread making journey.  I started by doing research on the internet about flour, yeast, kneading.  I found some good basic tips for making bread here.  I also thought it would be a good idea to read up a bit on yeast as well, and I did that here.  I am following the recipe pretty much, the only changes I have made is changing butter for margarine and regular milk for lactose free milk (to accommodate having a wonderful lactose intolerance). I started by “activating” my yeast in a mixture of warm water and sugar.  I learned that if the water is too hot, it will kill the yeast and you will get no rise out of your bread.  Your water should be around 41-46 degrees Celsius. I didn’t measure the temperature of my water, but after 10 minutes of letting it sit, it looked pretty disgusting, so I think it is working!

And after 10 minutes, it got sufficiently foamy and rather gross looking.


I then mixed in the remaining ingredients and mixed around with my trusty wooden spoon! 🙂 Then I turned my dough out on the floured counter and kneaded it for 10 minutes.  I have included a video of me kneading the bread.  I watched this video to give me an idea of how to knead bread.  I tried to follow the suggestions in the video the best that I could; however, I found it hard to not use my fingers and as you can see, I just did.  I also had to flour my counter and my hands a few times.  But the recipe called for about 5 1/2 cups of flour and I only ended up using about 4 3/4, so you can see they leave some wiggle room in the recipe.  After I had kneaded for 10 minutes, I sprayed the bottom of my bowl with cooking spray, as well as the top of the dough.  The recipe said to cover the bowl with parchment and a tea towel.  I didn’t have parchment so I just used plastic wrap, I thought it would be able to keep the breeze off the dough better anyway.



Well, since the dough has to rise for an hour, I guess I have plenty of time to do laundry. 😦

I checked my dough and it was more than doubled after 50 minutes, so I punched it down, turned it out onto a floured surface and cut it in half.


To shape the dough, I watched this video.  Then I covered them with the plastic wrap and a tea towel to rest for 10 minutes.  While they were rising, I preheated my oven and moved my racks, since the recipe said to cook on the lowest rack.  In order to do this, I had to take one rack out for the bread.  It said that the top of the loaf should sit about the middle of your oven.


After rising for another hour and baking for 25 minutes, I had a finished product.


The bread did not rise over the sides of the loaf pan, so it was a little short.  After doing some research, I learned that the pan I used was too big.  I used a pan that is supposed to be used for banana breads.  It is supposed to be a smaller pan for yeast breads.  Live and learn.  I guess I will have to go shopping before I make bread again!

I Will Rise to the Occasion!


Hello Friends,

So I have decided that for my major learning project I am going to be embarking on a journey to learn how to make bread/buns, etc.  I have always wanted to learn this skill, however, my mom does not make buns and the one time I remember my grandma making buns…well, lets just say the bottoms were black as could be.  My mom did always make bread for breakfast, however, she used a bread maker.  Not having the technology of a bread maker, I will need to learn the techniques of working with yeast, kneading dough, and proofing the dough.  So not having a role model in my life to teach me this skill, I have never tried.  Also, I have been scared to work with yeast, as I have heard it can be very temperamental.  I have also not been able to find the time to learn this skill and this is the perfect opportunity; so I figure, what better time to learn than now!  And with no one to teach me, the internet will provide as an excellent learning source for this project.  I am very excited to begin.  I will track the process of my learning journey here with websites, videos, and photos.
